This pumpkin recipe is ridiculously easy. A few simple ingredients that are most likely in your pantry, except for pumpkin puree. Keep in mind, for this recipe I used this muffin tray which made 6 jumbo muffins and about 4 cupcake sized muffins. If you use a cupcake tray, this will yield about 24 muffins or you can turn them into cupcakes.

The Best and Easiest Pumpkin Muffin Recipe

Prep Time: 15 minutes

Cook Time: 45 minutes

  • 2 3/4 cups of flour
  • 1 teaspoon of salt
  • 1 teaspoon of cinnamon
  • 1 teaspoon of baking soda
  • 1 1/2 cups of granulated sugar
  • 2/3 cups of light brown sugar
  • 3 eggs
  • 15 oz of pumpkin puree
  • 3/4 cup of vegetable oil
  • 1/4 cup of milk
  • 1 tsp of vanilla extract
  • Cinnamon Sugar Topping
  • 1/4 cup of granulated sugar
  • 1/2 tsp cinnamon

  1. Preheat your oven to 350 degrees
  2. Put flour, baking soda, sugar salt, and cinnamon in a large mixing bowl. Whisk the dry ingredients and set aside.
  3. In a small bowl, mix the cinnamon and sugar together. Set aside as this will be for our muffin topping.
  4. In a medium mixing bowl, whisk the pumpkin puree, eggs, oil, and vanilla extract.
  5. Slowly pour the wet ingredients into the dry mixture and stir together. Do not over mix
  6. Evenly distribute the batter into the muffin tray. Fill until they are almost full. This is how you get the dome shape of a muffin.
  7. Sprinkle the cinnamon-sugar topping on top. You can put as much as you like.
  8. Bake your muffins for 40-45 minutes. Double-check by inserting a toothpick to the center of the muffin. If the toothpick is clean when you remove it, the muffins are done.
