Don’t let anyone tell you that you can only enjoy ice cream in the summertime. Bruster’s Real Ice Cream fall ice cream flavors back and they are so delicious and scream all things fall. I’m not sure about you, but I find myself being more creative with food and dessert during the fall. After visiting my local Bruster’s Fresh Ice Cream shop. I picked up Caramel Apple Crunch which is an apple ice cream with caramel cinnamon ribbon and cinnamon vanilla cake crunch. I also chose Pumpkin Patch, a pumpkin ice cream with graham ribbons and pie pieces. Both of these flavors are delicious! After trying these rich flavors, I instantly became inspired and wanted to create something fun with them. My son and I love ice cream sandwiches so, I thought, why not make fun fall-inspired sugar cookie ice cream sandwiches!
Making these ice cream sandwiches are so easy and here is my baking hack. Pick up ready to bake sugar cookie dough from your local grocery store. Not only do they taste amazing but this method will save you a lot of time. I know, you probably thought that I made these but sometimes it’s best to take a shortcut in the kitchen.
Once you bake your sugar cookies, you want to let them cool completely before making your ice cream sandwiches. This will help prevent your ice cream from melting fast. To make your sugar cookies more festive, get your favorite fall sprinkles to decorate your ice cream sandwiches. I always find that kids enjoy decorating their treats so this would be a fun activity to get your kids or family in the kitchen and get creative.
