What is the first thing that comes to mind when you hear the word “holiday”? For me, it’s baking holiday treats! I love putting together family favorite meals and desserts together during the holiday season. I always make seasonal desserts because it gives us something to enjoy with our friends and family during the holidays.
It is no secret that this year has complicated our lives all around. Typically, the holidays are the time of year when we look forward to gathering together with our friends and family to enjoy a spread of home cooked dishes and fun seasonal desserts that we made memories creating together. But, for many of us, gatherings have or will be put on hold. That’s why I love to keep the spirit alive by maintaining my tradition and creating this holiday treat.
The great news is that one of my family’s favorite treat making activities can be enjoyed near or far. Yearly, I make my homemade Peppermint Bark inspired Kellogg’s® Rice Krispies® treat with my family. This is a time I cherish because it brings back so many memories of past holidays, even going back to my childhood. I love to put a seasonal twist on a classic and favorite treat because it gets me right in the holiday spirit. The best thing about these is that they are so easy to make. My homemade Peppermint Bark Flavored Rice Krispies treats are now a part of our holiday traditions but this year I switched it up and made Peppermint Bark Flavored Cocoa Krispies treats, it was so fun to experiment!
Making Cocoa Krispies treats consists of three simple ingredients, marshmallows ( DEAL HERE for free Publix marshmallows (up to $2) with the purchase of 2 Kellogg’s Rice Krispies Cereal valid 11/21/2020-12/4/2020), butter, and a box of Kellogg’s Cocoa Krispies® Cereal which can be found at your local Publix in the cereal aisle, white chocolate, dark chocolate, crushed candy canes, and holiday sprinkles.
The Cocoa Krispies Cereal adds a nice chocolatey flavor. When mixed with sweet white chocolate and delicious peppermint, your family will be craving this delicious treat every holiday and I had such a fun time making it.
To make these, you will need a dish, preferably 13×9. This will help create a rectangle shape that will allow you to easily cut your Cocoa Krispies treats in any shape you want. To start, you will need to make your marshmallow mixture. To do so you will begin by melting 3 tablespoons of butter in a deep pot and add 4 cups of mini marshmallows. Once melted, add 6 cups of Kellogg’s Cocoa Krispies Cereal. Mix until all of the ingredients are combined.
Add your mixture to your pan. Gently press your mixture into the pan. Let cool for about 10 minutes. While the mixture is cooling, you can begin to prep your toppings. Crush your candy canes into your desired size. I prefer a mixture of large and small pieces. The larger pieces give a nice crunch for a perfect blast of peppermint. Place your peppermint pieces on a plate so that we can drip our Cocoa Krispies treats in it.
At this point, your Cocoa Krispies mixture should be cool. You will cut these into your desired shape. You can do fun holiday shapes by using cookie cutters or keep it traditional and cut into squares as I did. Next, we will begin to melt the white chocolate. I used white chocolate chips and melted them in my microwave. Microwave your chocolate in 30-second intervals to avoid the chocolate burning. Keep doing this until your white chocolate is smooth and ready for dipping.
Making this holiday treat is effortless and takes minimal time to make. Adults and children in my family love coming together to make it. Even if you are unable to physically be around your family this holiday season you can incorporate this recipe and family fun night via Zoom, I love this idea because it allows me to still feel close to the ones I love while I make our traditional holiday treats. You can also create a fun surprise package for your loved ones to extend the treat making fun outside of the kitchen. Simply cut your Peppermint Bark flavored Cocoa Krispies treats into squares, put them in cellophane bags and tie them tightly to ensure that they stay fresh in transit. You can put them in fun tins and make these a fun surprise package for your family because ’tis the season to treat ‘em!
